Work is to include a new exhaust fan in an existing Class II hood, abandoning an existing toilet room, new roof top ductwork insulated to R-8 minimum, re-using the existing roof top HVAC unit, a new toilet room exhaust fan ducted to the outside, a grease trap, two convection ovens, new lighting, etc. Separate electrical, plumbing, and mechanical permits are required. Food processing operations that create grease laden vapors are not allowed.
